Vegan Mango Lassi

This sweet drink is enjoyed in India with a meal. To make it vegan I have used almond milk inside of dairy milk and my Banana & Cashew Ice Cream recipe as the vegan yoghurt. It is quick to make and so delicious!

Serves 4

2                      Ripe Bananas

50g                  Cashew Nuts

2                      Ripe Mangoes

200ml              Almond Milk

300ml              Filtered Water

2 tbsp              Agave Nectar

¼ tsp               Ground Cardamom

Make the vegan yoghurt by blending the ripe bananas and cashew nuts for 30 seconds.

Slice the mangoes into quarters and then peel off the skin. Chop up the flesh and add to the blender along with the rest of the ingredients. Blend for 1 minute until smooth.

Pour into a tall glass and serve immediately!

Raw Mango Cheesecake

Treat yourself to this tasty raw mango cheesecake!

Makes 1

Base:

150g               Walnuts

150g               Dates

1tbsp              Desiccated Coconut

1tbsp              Flaxseed

Topping:

2                     Ripe Mangoes

150g               Cashew Nuts

3tbsp              Agave Nectar

1tbsp              Peanut Butter

1tbsp              Coconut Oil

Soak the walnuts in water overnight.

Add all the base ingredients into a food processor and blend until the mixture starts to stick together. Scoop out of the food processor and spread evenly in the bottom of a cake dish with a spoon.

Blend the cashew nuts until fine. Add in the other ingredients and blend until a smooth paste has formed. Pour into the cake dish over the base and spread evenly with a spoon. Put in the fridge to set for a few hours. Serve and enjoy!

Store in the fridge. Eat within a week.

Tropical Pineapple & Mango Smoothie

A refreshing smoothie full of enzymes and vitamins! This pineapple and mango smoothie will remind you of tropical destinations.

Tropical Pineapple & Mango Smoothie

Serves 1

Ingredients

1                     Ripe Mango

1 slice             Pineapple

1                     Kiwi

1tbsp              Desiccated Coconut

300ml             Filtered Water

Method

Cut up the mango and pineapple and place in the blender. Scoop out the kiwi with a spoon and add into the blender along with the coconut and water.

Blend for 30 seconds.

Pour into a glass and enjoy!
